Frequently asked questions
How much lower is a fan oven?
About 20 °C (25 °F) lower than a conventional oven, because the moving air cooks faster. Many recipes give both; if only one is given, it is usually for a conventional oven.
What is a gas mark?
The oven scale used on gas cookers in the UK and Ireland: gas mark 4 is 180 °C (350 °F). Each mark is about 14 °C (25 °F) apart above mark 1.
Are oven dials accurate?
Often not: home ovens can be 10–25 °C off. An oven thermometer shows the real temperature.
